Cast Iron Dutch Oven Quickie
I cooked an incredibly delicious pork tenderloin tonight very quickly and easily. I had meant to cook it over the weekend but with the snow and all we spent the entire weekend shoveling myself out! Wow, my shoulder and back are pretty sore but with such a great work-out I should be ready for the next one!
So, I had a lot to do tonight and didn’t want to mess with lengthy preparation or cooking so I took the pork tenderloin out of the refrigerator, placed it in my cast iron skillet (with the lid), poured about a cup of Wild Turkey bourbon (80 proof) all over it and added the following:
1 clove finely chopped garlic
1 tsp basil
1 tsp savory
1 tsp rosemary
1/2 tsp rubbed sage
1/2 tsp oregano
1/2 tsp white pepper
I put the lid on the skillet, popped it in the oven (pre-heated to 390F) and cooked it for 40 minutes…take a look!
It was DELICIOUS. Best of all, it took less than 5 minutes to prepare. Clean-up was nothing at all. I simply rinsed the skillet in warm water and dried it with a paper towel.
I’m telling you, cast iron is AWESOME!
